Barrel-Aging gives our honey a deeper, richer flavor than regular raw honey.  Subtle notes of vanilla, oak and whiskey are present, but not overpowering.

We can only put 45 gallons of honey into each barrel, which yields around 60 cases - something to savor and enjoy.

How we're helping small businesses
support each other

From the beginning, the philosophy behind Lucille's Barrel-Aged Honey has always been about supporting local small businesses by purchasing and promoting their products.

Step one of our Bee-Cycle is starting with high quality local honey.

Buying raw honey from local bee keepers ensures our product provides the unique antibodies and nutrients customers in our region seek out for allergy management.

Step two of our Bee-Cycle is sourcing freshly emptied whiskey barrels from local distilleries.

​We trade cases of honey for whiskey barrels with local distilleries.  Stickers on the back of the jars indicate that the honey was aged in a barrel from their distillery, which gives them a unique product to sell in their tasting room.  They also create cocktails to feature our honey for their tasting room and we share those on our recipe page! 

Step three of our Bee-Cycle, after we take the honey out of the barrel, we send the barrel to local breweries.

​Scheduling beer release tasting parties when it comes out of the barrel allows our customers to discover new local breweries they might not have been aware of.  Sign up for our Mailing List, it's the best way to get invited to all the Beer Release parties!

Step four of our Bee-Cycle, a local craftsman takes the barrels apart and makes furniture out of them.

​Passing along the barrels free of charge to our local craftsman enables him to keep costs low.  The publicity on our website, and word of mouth at the farmers markets, helps him gain new customers to whom he can offer special order custom pieces.​

This is our redesigned label for Lucille's Habanero Honey.
Lucille's Habanero infused honey only uses fresh habaneros.

Lucille's Habanero Infused Honey is not "hot just to be hot".  Raw local honey is steeped with fresh habaneros to give you a great pepper flavor before the heat kicks in.  It's hot, but doesn't overpower the flavor - or your taste buds.  You can still taste your food AND feel your tongue.

Not your typical hot honey

Lucille's Ginger Infused Honey is not spicy like fresh ground ginger.  Local raw honey is steeped with fresh ground ginger, but the honey takes away all the spicy kick.  What you're left with is a sweet ginger that lingers long after you've tasted it.

Seasonal micro batches

We like to experiment with new ideas.  From time to time there will be what we'd call micro batches of different infused honey.  These micro batches will only be available seasonally as the fresh local ingredients are available.

 

  Our first batch was Lucille's Hopped Gourmet Honey.  The flavor starts sweet and then you get amazing floral notes from the hops, with that touch of bitterness hops are known for. It has a nice round flavor without being overpowering.
