I've just been to the local grocery store and there's not much stock on the shelves. Except in the Produce Section!! The shelves are bare in the pasta and rice sections. But there is actually a lot of produce and it needs to get used. So I decided to create a new recipe made from ingredients you can actually still get at the supermarket.
Introducing Spicy Pineapple Black Bean Salsa! The crunch of the apples is a good contrast to the sweet, soft pineapple and black beans. The cardamom and cilantro round out the flavors before the heat from the honey kicks in.
Ingredients:
3 oz Lucille's Habanero Infused Honey
1 Pineapple
2 crisp apples (I used Johnagolds)
1 can Black Beans (15oz)
1 bunch fresh cilantro
1/4 tsp cardamom
1 tsp Salt
1 tsp Cracked Pepper
Peel, core and small dice your pineapple and 2 apples.
Place them in a large mixing bowl.
Finely chop your cilantro and mix in.
Add Lucille's Habanero Infused Honey. You can buy it direct from us here.
Add Black Beans, cardamom, salt and pepper.
Mix completely and serve with your favorite tortilla chips.
If you want it a little spicier, add cayenne pepper.
If you want it a little richer, add 3-4 small medium diced avocados.
